Professional Tasting Note
Appearance:
Deep, intense ruby red with youthful purple highlights. Dense and vibrant in the glass, showing excellent color concentration and moderate viscosity.
Nose:
The bouquet opens with ripe blackberries, black cherries, and wild forest berries, followed by notes of plum compote. Secondary aromas reveal licorice root, sweet baking spices, vanilla, cocoa, and cedar derived from the extended barrique maturation. With aeration, subtle earthy nuances of forest floor, leather, and Mediterranean herbs emerge, adding complexity and varietal character.
Palate:
Full-bodied and structured, displaying the power that is characteristic of Tintilia while maintaining freshness and balance. The attack is generous, with concentrated dark fruit supported by lively acidity. Fine-grained but firm tannins provide a solid backbone, while the 24 months of French oak aging contribute layers of vanilla, toasted spice, and dark chocolate without overwhelming the fruit. The wine finishes long, savory, and persistent, with lingering notes of black fruit, licorice, and sweet spice.
Overall Assessment:
A refined expression of Molise’s indigenous Tintilia grape, combining varietal authenticity with careful oak integration. The 2021 Opalia is a wine of depth, elegance, and excellent aging potential, capable of developing additional tertiary complexity over the next 8–12 years under proper cellar conditions.
Serving Temperature:
16–18°C (61–64°F).
Food Pairing:
Outstanding with grilled lamb, braised beef, wild boar ragù, roasted game, dry-aged steaks, and mature Pecorino or Caciocavallo cheeses. It also pairs beautifully with traditional Molisan cuisine and richly flavored mushroom dishes.
