Nose:
The bouquet is intense and expressive, with layered aromas of ripe black cherries, sun-drenched plums, and dried figs, supported by notes of Mediterranean herbs, sweet tobacco, and a delicate hint of baking spices. Subtle earthy undertones and a whisper of leather add complexity, evoking the warmth and authenticity of Salento’s terroir.
Palate:
On the palate, the wine is full-bodied and well-structured, showcasing the richness of old vines. Ripe dark fruit leads the way—blackberry and stewed cherry—followed by nuances of cocoa, licorice, and a touch of balsamic. The tannins are firm yet polished, offering a balanced counterpoint to the fruit. A vibrant acidity lifts the mid-palate and carries the wine through to a long, savory finish.
Food Pairing:
Ideal with hearty dishes such as slow-braised lamb, wild boar ragù, aged Pecorino, or grilled aubergine with herbs. Also an excellent companion to traditional Puglian fare like orecchiette with tomato and ricotta forte.

Serve at 16–18°C in a large glass to allow the bouquet to fully open. Decanting for 30–45 minutes is recommended to enhance aromatic complexity.
