496 De Sanctis 2020

This is a white wine from Lazio region. Specifically from Frascati, we visited this winery in 2020. It's a Frascati superiore DOCG. It was obtained from Malvasia di Candia (90%) and Trebbiano Toscano (10%) grapes grown in the territory of Frascati (RM) of volcanic matrix and therefore naturally rich in minerals. The original vineyards are located at an altitude between 200 and 250 meters above sea level and include vines between the ages of 35 and 40. For the Frascati Superiore 496 2020 of De Sanctis the alcoholic fermentation, which transforms sugars into alcohol, took place in steel, at a controlled temperature and for a period of 15-20 days, being activated through indigenous yeasts. The winemaking process did not provide for the addition of sulphur dioxide. Before being marketed, the wine rested for 5 months in steel and for a short time in the bottle.

The Frascati Superiore BIO 496 by De Sanctis presents itself at the sight of an intense straw yellow color. On the nose it expresses fragrant scents of white flowers that intertwine with hints of yellow flesh fruit and sharp notes of flint. The palate is fresh and full-bodied, supported by a firm minerality that persists in the finish. Excellent as an aperitif, at the table it goes well with fresh and semi-seasoned cheeses as well as vegetarian dishes and tasty seafood recipes. PM 89
